The remora can only be met in the level "The Dead of Night" free swimming in the water.
Despite the description given by the game the Remora doesn't really help in any way defending Jaws. The fish doesn't follow Jaws or detach from it when an enemy approaches the shark, since no script has been implemented to do such action. It can only be eaten.
